Course overview

In this hands-on course you will be introduced to creating delicious Petit Gateaux (small cakes) with teacher Max Chong.

Petit Gateaux are small mousse based cakes, made of layers, texture, filling, glaze and garnish.

Each lesson, you will learn to prepare the cake mixture, dacquoise, sponge, Italian meringue, and bavarois with seasonal fruit.

You can take home your creations after each lesson.

Throughout this course you will experience a variety of cooking, preparation and 'watch and follow' demonstrations by the teacher.

This short course is non-accredited therefore is not registered with the National Training Register.

Entry requirements

There are no formal entry requirements for this course.

Selection criteria

It is recommended students have prior knowledge of patisserie and/or have completed the first French Patisserie Baking course at TAFE Queensland.

Resources Required
  • Please bring the following baking utensils - spatula, piping bags (medium size disposable), piping nozzle (10cm round, required for the last class), small knife, digital cooking thermometer and take away containers. Please also bring an apron, washing up cloth, two tea towels, a pen and notebook.
  • You must wear flat enclosed shoes that are comfortable. This is a workplace health and safety requirement as we are working in a commercial kitchen.

All recipes and food ingredients are included.​
