Set yourself on the path for a hands-on career in baking. Specialise in bread baking and gain the skills you need to work in a retail baking environment.

Demand for retail bakers in Australia continues to grow. In 2015 there were over 32,000 people employed as bakers and pastrycooks. Over the next five years job openings in the sector are expected to be between 10,000 and 25,000.

In this course you will discover how to produce and process the perfect dough. We will teach you how to diagnose and respond to product faults to bake consistently perfect loaves of bread. You will also learn how to control and order stock, and plan and scheduling production in a retail baking environment.

You will graduate with the skills required to establish your career as a baker specialising in bread baking.

Entry requirements

Students must be employed as an apprentice and have a signed Registered Training Contract, stating TAFE Queensland is the Supervising Registered Training Organisation (SRTO).

Resources required

It is recommended that you have access to a reliable internet connection to access TAFE Queensland's online learning system Connect, and a computer with up-to-date software, including Microsoft Office, Adobe Acrobat Reader and Adobe Flash Player. This equipment and software is available for use at all TAFE Queensland locations.

Need to know

Year 12 graduates: start trade training fee free, here’s how.

To be eligible to access fee-free training, you must:

  • have completed Year 12 in Queensland and hold a Senior Statement issued by the Queensland Curriculum and Assessment Authority or equivalent certification
  • enrol and start an apprenticeship, traineeship or training, with an approved training provider in a high priority qualification by the end of the calendar year following completion of Year 12
  • permanently reside in Queensland.
