Course overview

Learn to cook foods from around the world, including Mexico, India, Turkey, China, Iran, Italy, Thailand, and Austria, as well as fusions of various cultural cuisines.

Each week we will cook appetisers, mains, salads, and desserts, and all ingredients are made from scratch in healthy and efficient ways.

Some examples of vegan food you will cook in the class are Cajun tofu soft tacos topped with a crunchy and creamy avocado aioli, Indian vegetable curry with brown Basmati green herb rice, falafel and tabouli wrapped in za'atar and humus flatbread, mushroom schnitzel with kartoffelsalat, walnut and pomegranate stew, steamed vegetable dumplings, orange and chili chocolate brownies, and many more exciting dishes and fusions from around the world.

Each week you get to take home your vegan cuisine to share with friends or family.

In addition to learning the art of vegan cooking, you will learn about the latest science on food and nutrition. Each week you will participate in a workshop about vitamins, minerals and nutrients in vegan foods and how to combine foods for optimal health. The workshop will also teach you how to plan daily and weekly vegan menus that provide a well-balanced diet for you and your culinary guests.

There is no pre-requisite for this course, and students are welcome to enrol in this course even if you have not previously participated in our beginner course. However, please note that this course is suitable for individuals with some culinary experience. Individuals new to vegan cooking or with little culinary experience are encouraged to enrol in the beginner vegan cooking and nutrition course with the same instructor.

Resources required

  • The course includes all food ingredients, all recipes, printed slides with scientific research on nutrition, as well as cooking appliances, pots, and a well-equipped industrial kitchen. You can take home with you after each class appetisers, mains, salads and desserts.
  • Please bring the following utensils - two wooden cooking spoons, small sharp knife, large sharp knife, spatula, and at least 6 take away containers. Also, students please bring an apron, washing up cloth, two tea towels, a pen and a notebook.
  • Students must wear enclosed shoes which are flat and comfortable as we are working in a commercial kitchen and this is a workplace health and safety requirement.

Students need to present their Confirmation of Enrolment to the car park attendant each week to be eligible for discounted parking.

Need to know

The Hospitality Hub is located at 11 Nerang Street, Southport - a short walking distance from the campus. Car parking is available on campus.

Course commencement is subject to minimum enrolment numbers.

You may be assessed in a number of ways while you are studying at TAFE Queensland, including observation, written assessment, questioning, portfolios, work samples, third-party feedback, and through recognition of prior learning.
