Natalie nurtures future chefs

At TAFE Queensland’s Robina campus on the Gold Coast, Natalie Davey has turned her kitchen into a place of possibility, where young minds are inspired to thrive.

A former executive chef, Natalie transitioned from distinguished culinary professional to teaching the Certificate II in Cookery (SIT20421) through the TAFE at School program, where she now channels her industry expertise into nurturing new talent.

“Throughout my career, I managed large-scale operations, including running stadium kitchens. Now, teaching gives me the chance to share my wealth of knowledge and experience with budding chefs,” said Natalie.

"The school students come into the kitchen without any preconceived notions. They’re fresh, eager to learn, and open to new experiences."

However, working with school-aged students presents unique challenges, but Natalie has embraced these with an approach that fosters both learning and personal growth.

“Keeping students focused throughout the day can be difficult, especially with distractions like phones. However hands-on activities in the kitchen are key to engaging students and igniting their passion for cooking,” said Natalie.

“From 9am to 1:30pm, we're cooking in the kitchen, and the students are fully engaged. It’s fun for them, and they get to eat what they make at the end."

Natalie’s philosophy as a teacher is to nurture creativity and allows her students to experiment with different flavours and techniques.

"I encourage my students to be creative. I give them the basic recipe, but I want them to put their own twist on it, whether it’s adding spices or presenting the dish in a unique way," she said.

Her students also benefit from her warm, supportive approach, especially those who may struggle with anxiety or learning difficulties.

"It’s about being upbeat and approachable, making them feel comfortable so they’re not intimidated by the kitchen. I aim to create a safe, encouraging environment.”

One of the most rewarding aspects of Natalie’s work is seeing her students succeed beyond the classroom. After completing their training, many of her students go on to secure apprenticeships.

"It’s amazing to see them come back as apprentice chefs, working in big hotels. They’ve gained a head start because of the experience they’ve had with me, which is equivalent to what a first-year apprentice would learn,” she said.

Natalie’s passion and dedication were recognised when she was named the regional winner of the prestigious TAFE at School Educator Excellence Award.

This celebrated accolade highlights her unwavering commitment to empowering students through vocational learning and personal growth.
