Grandma's gluten-free crackers

Make a simple gluten-free cracker with our early childhood education and care students.

TAFE Queensland’s early childhood education and care students had a blast with Indigenous Student Support Officer, Tammy Rasmussen, learning to make a simple gluten-free cracker. This hands-on experience not only provided practical cooking skills but also introduced students to native ingredients and traditional cooking methods. Why not try this delicious and simple recipe at home?

Ingredients

  • 225g gluten-free flour
  • ½ teaspoon xanthan gum
  • ½ teaspoon fine salt
  • Sea salt for sprinkling
  • 1 teaspoon finely chopped rosemary or thyme
  • 3 tablespoons olive oil
  • 1 tablespoon maple syrup

Instructions

  1. Combine flour, xanthan gum, salt, and herbs in a bowl.
  2. Add olive oil, maple syrup, and 40-50ml water gradually until the mixture forms a ball. Knead slightly, adding more water if needed.
  3. Flatten dough to 1mm thickness, cut into shapes, and bake for 15 minutes. Sprinkle with parmesan cheese 5 minutes before done.
  4. Serve with your favourite topping or try camembert or brie wrapped in prosciutto with native honey or lemon myrtle, warmed in the oven.
