Kingaroy BaconFest inspired recipes

A curated selection of easy-to-prepare, delicious recipes for bacon-lovers by TAFE Queensland Hospitality and Cookery Educator, Jenni Southern.

Ingredients

  • 2 cups of sugar
  • 1 cup of water
  • 1 cup of peanuts
  • 5 slices of crumbled cooked bacon
  • 1 tablespoon of butter
  • Pinch of cayenne
  • Pinch of cinnamon

Method

Boil sugar and water in a saucepan, without stirring, until 171°C,  for approx. 8 to 10 minutes.

Stir in peanuts, crumbled cooked bacon, butter and a pinch each of cayenne and cinnamon.

Spread on a greased baking sheet to harden. Break in to pieces and serve.

Ingredients

  • 175g of diced slab of bacon
  • 500g brussels sprouts
  • 1 minced garlic clove
  • 2 tablespoons of teriyaki sauce
  • 2 tablespoons of water
  • Pinch of sugar
  • Pinch of chilli flakes

Method

Cook diced bacon in a pan; drain and keep.

Separate brussels sprouts into leaves. Stir-fry in the bacon drippings.

Add minced garlic clove, teriyaki sauce and water, a pinch each of sugar and chilli flakes, and the bacon.

Toss together and serve.

Ingredients 

  • 1 cup of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 1 cup of buttermilk
  • 1 egg 
  • 1 grated apple
  • 1/2 cup crumbled cooked bacon 

Method

Mix flour, baking soda, salt, buttermilk, egg, grated apple and crumbled cooked bacon until combined.

Cook in a hot buttered non-stick pan until bubbles form, flip over and cook until golden.

Ingredients

  • Pitted dates
  • Bacon slices
  • Blue cheese

Method  

Stuff pitted dates with blue cheese and wrap in bacon. Secure with toothpicks.

Grill, turning, until crisp for 5 to 6 minutes.

  • 3 slices of bacon
  • 250g of softened butter 
  • 4 tablespoons of maple syrup

Method  

Cook bacon in a hot pan; drain and chop.

Blend softened butter with the drippings and maple syrup.

Stir in the chopped bacon.
