Eccentric Pine mocktail

Tangy lime and tropical pineapple collide in this refreshing mocktail that takes just a few minutes to make.

The Eccentric Pine mocktail was created by Townsville (Pimlico) campus students Lavinia Stevens, Ivy Kinoti, and Sophie Motkin.

Ingredients

2 fresh limes

1 fresh, ripe pineapple

1 cup of Cocobella coconut water

1 cup of Sprite

2 mint sprigs

 

Method:

1. Cut up limes, leaving the skin on, and peel and cut up the pineapple, and blend together with 1 cup of coconut water.

2. Strain the blended mixture to separate the juice and pulp.

3. Pour 1 cup of the juice into a shaker, along with 1 cup of Sprite, the leaves from one sprig of mint, and 1/2 a cup of ice.

4. Close the shaker and shake the ingredients.

5. Prep your tall tiki cup with ice.

6. Double-strain the mixture from the shaker into the glass.

7. Garnish the mocktail as you please, serve, and enjoy!
