Showcasing Culinary Excellence and Event Mastery by TAFE Queensland Students

Students left a lasting impact at the 93rd Mudgeeraba Agricultural Show and at The Farmers Feast.

Gold Coast TAFE Queensland Hospitality, Cookery and Event students left a lasting impact at the 93rd Mudgeeraba Agricultural Show and at The Farmers Feast thanks to the exciting partnership between TAFE Queensland and Mudgeeraba Show Society. The Farmers Feast was held on Saturday 24 June at the Mudgeeraba Showgrounds.

This exciting partnership provided hands-on experience to approximately 30 students pursuing the Diploma of Event Management (SIT50316), Certificate III in Commercial Cookery (SIT40516) and Certificate 3 in Hospitality (SIT30622). All students combined their industry knowledge, skills and experience to deliver The Farmers Feast alongside The Mudgeeraba Show Society.

TAFE Queensland Educational Team Leader for Business, Education, Hospitality and Language Ben Stewart said the students prepared and hosted the 3-course luncheon known as The Farmers feast in the Equestrian Ring Marquee after the official opening the 93rd Mudgeeraba Agricultural Show.

“Our cookery team has made the selection for the 3-course luncheon based around; seasonality, sustainability, native influence and proximity,” Mr Stewart said.

“While the Event Management, Commercial Cookery and Hospitality students are in all involved they were all responsible for a different aspect of the event.”

“Students learnt about the challenges we face during offsite catering and having to adjust plans at short notice was an invaluable real-life hands-on experience for the students,” he said.

Mudgeeraba Show President Melanie Bryson said the partnership provided a fantastic opportunity for students to be part of an iconic multifaceted annual event and deliver a local level of experience, expertise and enthusiasm that is invaluable.

“Show guests enjoyed the equestrian competitions and grand parade as they sat ringside in the exclusive marquee enjoying a sumptuous 3-course shared menu that encompasses earthy and natural cooking techniques, whilst watching TAFE Queensland cookery students cook over live flames and coals utilising a range of native Australian herbs and fruits to enrich the dishes,” Mrs Bryson said.

“This event was designed to showcase the talents of TAFE Queensland Cookery, Hospitality and Event students.”

“Cookery students gained vital experience in the planning and preparation required to deliver a menu offsite.”

“Hospitality students had the opportunity to discover what is needed to prepare for service at a location with temporary facilities and limited resources whilst creating a sophisticated luncheon for over 100 guests, including VIPs including the Mayor & Mayoress, Gold Coast City Councillors, MP's and representatives for Queensland Ag Shows.”

“Event students managed the 2023 volunteer recruitment, retention and recognition of the Mudgeeraba Agricultural Show and planned rosters whilst liaising with the show committee and preparing Show volunteers for their duties. The event students provided additional volunteer support to the Farmers Feast to ensure that the luncheon ran smoothly,” she said.

TAFE Queensland was excited to offer their support and cooperation at another annual event. The Farmers Feast is an innovative way to enjoy the Show whilst discovering the exquisite flavours of local produce, all whilst the talents of TAFE Queensland students are championed.
