In this hands-on one day workshop, you will learn all the steps from how to bake a delicious sponge cake to how to decorate it. You will also learn tips on baking a good texture and flavour sponge cake.

Course Outline:

  1. Introduction to Sponge Cakes
    • What is a sponge cake?
    • Different types of sponge cakes
    • Tips for baking good texture sponge cake
  2. Baking a Sponge Cake
    • Ingredients and equipment needed
    • Step-by-step instructions for baking a sponge cake
    • Tips for achieving the good  texture and flavour
  3. Filling the Sponge Cake
    • Choosing the right filling
    • Preparing the filling
    • Filling the cake
  4. Decorating the Sponge Cake
    • Choosing the appropriate  decorations
    • Simple decorating techniques
    • Paring texture and flavour
    • Tips for creating a beautiful and professional-looking cake.

At the end of this class, you will be armed with fail-safe recipes, techniques and the confidence you need to bake a gorgeous sponge whenever you feel like it and for special occasions! Wow family and friends! Or even better, enrol with a friend or family member and have fun attending the course together!

Resources required

Please bring the following to class

  • A large rectangular container to take your cake home in
  • Silicon spatula
  • Palette knife
  • 25cm long serrated knife
  • Piping bag
  • Star and plain nozzle
  • Tea towel  
  • Apron

Please wear 

  • Closed in non-slip shoes
  • Long pants

Important information

  • We recommend arriving at least 15 minutes early to get checked in and settled as class starts on time.
  • We recommend using public transport or
  • If you are driving, BEFORE you arrive, please download the EasyPark App, set up your account and in the Search bar at top of the screen, type ‘Tafe’ and select the appropriate parking area to set as your location – something similar to this will appear- Care Park Australia street parking, private, 1 day duration.
  • We highly recommend you download the app and enter the details prior to arriving as there may be no signal in the basement. If you have any issues reach out to security on campus located on the ground floor near the lifts.
  • Parking can be accessed via Paddington Place. ONLY park in the spaces marked with the Red TAFE Queensland logo on the ground on either B1 or B2 to avoid being fined by Easy Park. 
    Please be aware that parking spaces can fill early.

Please note: The Seedpod Cafe on site at our Robina Campus is not open for business on the weekend or in the evenings so you are advised to bring your own refreshments.
The Green Fields bar & restaurant is on site- Level 4 Rooftop of our Robina Campus, for opening hours please see Green Fields information.
